The Social Phenomenon of Eating Out

The taco truck is creating a wonderful cultural phenomenon. People will now wait in line for 40 minutes – they’re talking, they’re hanging out. We have little chairs that we put out, so when they get their tacos, people are now sitting outside or standing by the truck. That’s the wonderful thing about street food – there’s this amazing relationship that happens between people who don’t know each other but are there and eating. It creates these unique communities. – SUSAN FENIGER
What we really created with Eataly – which we didn’t plan on – is a social phenomenon. In that space, people feel like they’re in Italy – they can have their espresso, a gelato . . . it’s almost like traveling through a block in Italy having all the little stores. It’s being social, it’s connecting, it’s not being enclosed in your little table. Sometimes you want to have a slice of prosciutto, you want to have a glass of wine, and, if there’s a guy next to you, to have a few words. – LIDIA BASTIANICH
When people go out to eat now, they want to be entertained. Now you hear people talking about dinner with their friends the way they would talk about a movie or a TV show. When I hear people talking about going to Eataly, they talk about the food but also the entire experience. I know when I go to one of José’s restaurants, the food is going to be amazing, but Bazaar really leaves you with an incredible experience. We talked about the experience for four days, and we’re restaurant people. – MICHAEL SYMON
Bazaar, to a degree, is like Eataly without the shopping. It’s a place you can go back to six, seven, eight times, and every time you go you are in a different part of the space. What we are learning is that people are looking for experiences beyond eating. I think they want to feel like they are transported somewhere else, that they leave the city they are in. When they come into a business like ours, they feel like they are traveling in space, time travel, and moving to somewhere else, and I think this is something really to consider. – JOSÉ ANDRÉS
