Sharing Responsibility and Savings
When the linen bill got out of hand at Two Chefs, Miami, FL, owner, Jan Jorgenson put one employee in charge of monitoring linen usage in exchange for a share of the savings. Jan set a goal of reducing the bill by 20% and the employee in charge, a busboy, keeps the difference between the goal and the actual bill. “This not only allows me to save money,” says Jan, “it gives a lower-level employee responsibility and extra income – he often makes an additional $200-$300 a month.”
